However, let\u2019s start by describing the coffee experience from, say, the legendary Caff\u00e8 Sant\u2019Eustachio, near the Pantheon. You order coffee at the door and come with the receipt to the coffee bar, where the assistant barista in a flash lays down in front of you glasses of water and saucers, at the same time giving your order in two words or none to a senior barista. This phenomenon is described, for instance, by Charles Spencer in his book <em>Gastrophysics<\/em>: the experienced taste is affected by all other senses, your mood, and how relaxed you are.<\/p>\n\n\n\n<p>Let\u2019s try to recreate the taste, though. It should be an \u2018on demand\u2019 grinder, without the ground coffee container or hopper in which the coffee becomes stale (the Italians also walk away from that). The grinder is by no means an addition to the coffee bar, it is even more important than the espresso machine \u2013 it is the key to proper coffee extraction, so don\u2019t economize on it.<\/p>\n\n\n\n<p>You also need to take care of the proper cleaning and maintenance of both the espresso machine and the grinder (dirty nozzles, filthy drippers, greasy hoppers and coffee scattered all over the place are pass\u00e9!)<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"799\" height=\"533\" src=\"https:\/\/b2b.coffeedesk.pl\/blog\/wp-content\/uploads\/2022\/10\/49731848098_145d67c897_c.jpg\" alt=\"\" class=\"wp-image-5231\" srcset=\"https:\/\/b2b.coffeedesk.com\/blog\/wp-content\/uploads\/2022\/10\/49731848098_145d67c897_c.jpg 799w, https:\/\/b2b.coffeedesk.com\/blog\/wp-content\/uploads\/2022\/10\/49731848098_145d67c897_c-300x200.jpg 300w, https:\/\/b2b.coffeedesk.com\/blog\/wp-content\/uploads\/2022\/10\/49731848098_145d67c897_c-270x180.jpg 270w, https:\/\/b2b.coffeedesk.com\/blog\/wp-content\/uploads\/2022\/10\/49731848098_145d67c897_c-770x515.jpg 770w\" sizes=\"(max-width: 799px) 100vw, 799px\" \/><\/figure>\n\n\n\n<ol class=\"wp-block-list\" start=\"3\"><li><a href=\"https:\/\/b2b.coffeedesk.pl\/kawa\/pod-espresso\/filters\/attribute\/76\/600\/attribute\/4\/17\/attribute\/2\/157\/attribute\/2\/2834\/attribute\/2\/11\/attribute\/2\/7\/attribute\/2\/\">COFFEE<\/a><\/li><\/ol>\n\n\n\n<p>Make sure that coffee is a typical Italian blend (if you\u2019re into, say, Neapolitan style, look for a 50\/50 Robusta blend \u2013 Robusta guarantees the biggest and thickest crema and classic Italian notes).<\/p>\n\n\n\n<p><strong>What else is important?<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Warming up the serving cups \u2013 most espresso machines generate so much heat that the porcelain placed on their top will warm up to the perfect serving temperature (35-45<strong>\u00b0<\/strong>C). Just be careful that the cups are not too hot (if you have an extra heating element in the espresso machine for the cups, it\u2019s easy to miss it and the porcelain can heat up even to 70<strong>\u00b0<\/strong>C!);<\/li><li>Filtering water for the espresso machine \u2013 preferably with a dedicated filtration system.
